The milk is cooked for about 1 hour (fat removal and pasteurization), then curdled with a small amount of salt and lime juice (only 0.01% in total), the cheese is pressed for 2–3 days and then dried in a smokehouse for 20–30 days. Thanks to this, it gains high hardness and a subtle smoky aroma.
