The Himalayan cheeses used for production come from the milk of free-range Himalayan cows. The milk is cooked for about 1 hour (skimming and pasteurization), then a small amount of salt and lime juice (only 0.01% in total) is added to curdle it. This is followed by pressing for 2–3 days to remove moisture and drying in a smokehouse for 20–30 days, which gives the treat its typical hardness and a mild smoky flavor.
