During production, the milk is boiled for about an hour (fat removal and pasteurization), then a small amount of salt and lime juice (only 0.01% in total) is added for curdling. The cheese is pressed for 2–3 days, then cut into pieces and dried in a smokehouse for 20–30 days, which gives it its typical hardness and a mildly smoky taste.
